Unfortunately not many multithreaded apps - yet. For a long time most of the multi-threaded apps were just a select few pro level things. 3D/Visualization software, CAD, database systems, etc.. Those of us who had multiprocessor systems bought them because we had a specific software in mind or group of software applications that could take advantage of multiple processors. As current CPU manufacturing processes started hitting a wall right around the 3GHz mark, chip makers started to transition to multiple CPU cores to boost power - makes sense. Software developers have been lazy for years, just riding the wave of ever-increasing MHz. Now the multi-core CPUs are here and the software is behind as many applications need to have serious re-writes done in order to take advantage of multiple processors. Intel tried to get a jump on this with their HT (Hyper Threading) implementation that essentially simulated dual-cores on a CPU by way of two virtual CPUs. Software developers didn't exactly jump on this and warm up to it. But I also don't think the software industry truly believed that CPUs would go multi-core on a mass scale so fast... Intel and AMD both said they would, don't know why the software industry doubted. Intel and AMD are uncommonly good about telling the truth about upcoming products. Both will be shipping quad-core CPU offerings by year's end.
What you're saying isn't entirely true and may give some people the wrong idea.
First, a multicore system is helpful when running multiple CPU-intensive single-threaded applications on a proper multitasking operating system. For example, right now I'm ripping CDs on iTunes. One processor gets used a lot and the other three are idle. I could be using this CPU power for another app.
The reality is that to take advantage of multiple cores, you had to take advantage of threads. Now, I was doing this in my programs with OS/2 back in 1992. I've been writing multithreaded apps my entire career. But writing a threaded application requires thought and work, so naturally many programmers are lazy and avoid threads. Plus it is harder to debug and synchronize a multithreaded application. Windows and Linux people have been doing this since the stone age, and Windows/Linux have had usable multiprocessor systems for more than a decade (it didn't start with Hyperthreading). I had a dual-processor 486 running NT 3.5 circa 1995. It's just been more of an optional "cool trick" to write threaded applications that the timid programmer avoids. Also it's worth noting that it's possible to go overboard with excessive threading and that leads to problems (context switching, thrashing, synchronization, etc).
Now, on the Mac side, OS 9 and below couldn't properly support SMP and it required a hacked version of the OS and a special version of the application. So the history of the Mac world has been, until recently with OSX, to avoid threading and multiprocessing unless specially called for and then at great pain to do so.
So it goes back to getting developers to write threaded applications. Now that we're getting to 4 and 8 core systems, it also presents a problem.
The classic reason to create a thread is to prevent the GUI from locking up while processing. Let's say I write a GUI program that has a calculation that takes 20 seconds. If I do it the lazy way, the GUI will lock up for 20 seconds because it can't process window messages during that time. But now with more than 4 or 8 cores, the problem is how do you break up the work? 9 women can't have a baby in a month. So if your process is still serialized, you still have to wait with 1 processor doing all the work and the others sitting idle. For example, if you encode a video, it is a very serialized process. I hear some work has been done to simultaneously encode macroblocks in parallel, but getting 8 processors to chew on a single video is an interesting problem.

If this happens, I will proudly use Bit Torrent and pirate all Universal music that I want. Right now I use itunes because the price scheme is perfect. Universal is making a big mistake.

OEM licensing OS X would not be a panacea. I supported NeXTSTEP/Openstep for NeXT and Apple. We had a nightmare dealing with OEMs who pushed us into the trash heap.
When the merger happened they showed no more interest knowing that we could move the OS to Intel since we had it running on Intel.
Motherboard manufacturers cut corners. OEMs cut all sorts of corners on their I/O cards.
Corralling all necessary OEMs to stick to a specific spec would be a nightmare.
Vista is a classic example of diluting your OS. Five years and counting.
Apple is both a hardware and software company.
The price for their latest Mac Pro shows how price competitive it is with the rest of the industry.
Having built several clone boxes none of them from the case design, integrated motherboard design, controller design, heat transfer requirements, etc comes close to the Mac Pro. It doesn't include Hardware RAID out of the box. Big deal.
When the clone industry can produce cases in general that compete for structural integrity, motherboards with as few cables, easily maintanable cases that are easy to keep dust free then Apple might feel concerned about it's claim to having the most complete experience.
OS X has shortcomings in areas for Engineering (CAD/CAM, FEM, etc. All 3rd party concerns), Games (3rd party concerns, OpenGL 2 concerns that Apple will fix), Vertical Solution concerns (assuming Apple wants to attack the business sectors they will have to address this lack of productivity tools for Finance & Accounting within iWorks) and some other deficiencies.
They are covering their bases and growing their base, quarter by quarter.
When ROME is finally built are we all going to whine that you can save $50 here or there with a clone?

Licensing out OS X wouldn't necessarily mean compromising its security; the compromise would come in some of the non-Apple hardware OS X ran on. Much has changed since the days of the original Apple clones that proved to be an expensive failure. Today, technology generally is much less expensive. Customers would appreciate the kind of choice that, after all, hasn't done too much harm to sales of Windows PCs. (I'd probably still buy Apple, but some others may buy a cheaper Dell running OS X).
Granted that the Mac Pro is competitively priced, those recent comparisons with the more expensive Dell workstation overlook that the Mac Pro graphics (Geforce 7300 GT) cost approx $100; the Dell's Nvidia graphics are closer to $1,000. (A point for objectivity's sake).
Like most Mac owners, I believe Apple are still by far the best for overall quality & service (though I think they're currently lacking at least one more consumer-aimed computer). I'm just interested in any ideas that could further expand the OS X userbase, & sustain it long-term.

Probably what bothers me the most about the discourse that Android is open is the underlying logic that is an implicit (or perhaps really explicit, depending on who is touting that discourse) assumption that it is democratic, liberal, progressive, and for "the people" and thus prevents a "draconian future" from happening because instead of letting corporations dictate our digital worlds, the people will a) have a say in it and b) have a choice.

I believe Intel has been having trouble getting the required chipsets out on time to the desktop market.
You can get the chips themselves without much trouble- the retail versions are available at Newegg for the 1.86, 2.13, 2.66, and 2.93 Extreme Core 2 Duo chips, with the sole out of stock chip being the 2.4GHz chip, with an estimated time of arrival being Sept. 1st at 2:30PM.
I was at a local DIY store Saturday, and they had stacks of Core 2 Duo (Conroe) chips in all speeds, and lots of mobos with 965 and 975 chipsets.
It would be unusual for that store to have all that kit if there's a supply problem.

One app would be iTunes. I noticed iTunes was running 14 threads last night. Any time you have a multithreaded application or are running multiple single thread aplications more cores can help.
iTunes is generally so low-impact that it could be single threaded and you probably wouldn't notice. If the main thread is bogged down, I still get the spinny color disc with iTunes on occasion. It seems to do this sometimes when I sync an iPod, iTunes sometimes won't let me do anything else.
An eight-core system should be able to eight single threaded programs running at 100% of one CPU without issue. What I hope is that more programs that need the processing power can use the full power of more than one CPU so you don't need to multitask so heavily to take advantage of the power available.

Now, how could FCP utilize all of that? How could all these little pieces add up to one large, powerful network for editing and distributing media throughout a home or office?
I'll bet the iPad will be able to control the FCP UI and take advantage of a cluster of Mac Pro's (or a single mac) to do a lot of the editing, compressing, etc, and then use the iPad to stream that footage to any HDTV with an AppleTV or mac connected to it.
I'm sure there will be a new UI and we can always sit at the workstation if we please, but imagine being able to make edits, compress, and stream rough drafts across the country/world. You can be editing on your xserve cluster from the airport while your waiting for your flight. With in air wifi, you could probably even work from the plane...without the bulk of a laptop.

Actually, the merom in not completely compatible with the yonah chips. There will have to be some redesign on Apple's part that is supposed to delay the new MBPs. This article somewhat explains it:

I know a lot about alcoholism and codependence because my mother is a nurse who specialized in treating alcoholics and other drug addicts and in counseling them. You don't help an alcoholic by protecting him from the consequences of his actions. The protection can help him make even bigger mistakes. I've seen that happen in many families I know of that include alcoholics. I also know about entitled welfare recipients who abuse social programs by demanding too much from social programs, by getting it, and by defrauding them. I saw the entitlement firsthand when a relative of mine was a landlord who rented houses to welfare recipients. Welfare recipients ruined a house, my relative kept the security deposit, and then the family got the Department of Social Services to put them into a house for twice the rent my relative charged. How much did government intervene in business affairs during the Roaring 20's? The government has already failed to do what it should do: It should promote the common good. I find it hard to believe that the U.S. Government had this country's best interests at heart when I hear Mrs. Pelosi say that to find out what's in Obamacare, you need to pass it.
I know a lot about alcoholism and codependence because my mother is a nurse who specialized in treating alcoholics and other drug addicts and in counseling them. You don't help an alcoholic by protecting him from the consequences of his actions. The protection can help him make even bigger mistakes. I've seen that happen in many families I know of that include alcoholics. I also know about entitled welfare recipients who abuse social programs by demanding too much from social programs, by getting it, and by defrauding them. I saw the entitlement firsthand when a relative of mine was a landlord who rented houses to welfare recipients. Welfare recipients ruined a house, my relative kept the security deposit, and then the family got the Department of Social Services to put them into a house for twice the rent my relative charged. But the family still had the nerve to complain that my relative had overcharged it.
